「stay up late」は「夜更かしする」という意味の口語表現です。
夜更かしを説明する際の日常会話で最も一般的な表現。
long（長く）・often（頻繁に）・much（たくさん）はどれも「way too ___」の形には入るが、「stay up ___」で「夜更かしする」という決まった言い方になるのは late だけ。直後の「got up earlier this morning（今朝は早く起きた）」と対になっているのも「遅くまで起きていた」だから。
